It’s hard not to smile when you see one of April Baker’s cakes. They are so visually compelling, it’s the wow factor on your dining table with their swirly peaks and the prettiest palette of blush pink frosting. It’s Marie Antoinette meets the Mad Hatter’s tea party, with a touch of Polly Pockets and My Little Pony– utterly joyful and fantastical and total escapism during lockdown.
Roxy and Corinne Mankoo are the half-Greek, half Indian sisters behind April Baker who grew up as two of five siblings in a rambunctious household where big, noisy dinners were very much the modus vivendi. Roxy trained in art and design and then as a pastry chef. Favourites include Rose infused sponge with fresh raspberries and raspberry buttercream. Or otherwise try the Vanilla Earl Grey and Orange Prosecco.
Roxy’s cakes transport you to another universe! They look fun and I suppose after 20 years of designing at Caramel, I still want to have fun. Of course there’s a huge consideration that goes into what we do and an embracing of quality and slow fashion but I also like to inject frivolity and playfulness. It’s important not to forget that.
