The joy of eating under the dappled shade of a tree

There are few joys in this world that match the simple pleasure of eating al fresco. Food somehow tastes better and conversation flows more freely when outdoors – in the sunshine, under the dappled shade of a tree.

Warm weather and a relaxed mood dictate a simple menu – something light, fresh and, above all, easy to throw together. Crisp leaf salads doused in peppery dressing – perhaps with a few chargrilled vegetables, salted anchovies and black olives thrown in; plates of sweet melon and plump figs draped in prosciutto; creamy burrata with baby tomatoes and delicious green basil. For lunch or dinner in the garden, I like the kind of food that isn’t so much about cooking, as it is tossing a a few fresh flavours together.

Last but not least, I always decorate the table a little, but am mindful about keeping it as deliciously informal as possible: jugs of flowers or greenery from the garden, bowls of fresh summer fruits – cherries, soft pink peaches, apricots and the like. If it’s dinner outdoors, I tend to go with lots and lots of candles, then look up and enjoy the stars in the sky.

And for pudding: ice cream in cones.
